A summer meal

I love to set the table and invite a small group of friends and/or family to a simple, yet elevated meal in my home. It doesn’t have to be fancy or fussy. Simple little touches can elevate an everyday meal and make it feel like a subtle celebration.

Here’s my favorite “no recipe” salmon that is a crowd-pleaser and enjoyed by people that don’t like mustard!

Take a salmon fillet and place it on a parchment covered baking sheet.

Cover the salmon with 1-2T of mustard- I love a grainy mustard, but dijon works well here too!

Mince a couple of cloves of garlic and sprinkle on the salmon. (Adding a shallot to the mix is delicious as well!)

Sprinkle with salt and pepper.

Here’s my secret: Drizzle with olive oil- I promise, it doesn’t make it greasy- it just seals in the moisture-

Bake at 375 degrees until just cooked (or even a little tiny bit more rare than you want, since it will continue to cook as it cools).

Place on a serving platter with a spring of rosemary as a garnish- and Voila- you have the makings for a elevated everyday meal!
